1. Pinot Noirs: A Global Review (7/21/2009)
This grape is hot. Sure, it received a great bump from the movie Sideways; but it has legs in its own right. And it is one of the few red wines that works well in the warmer months. We’ll start out with the classic red Burgundy archetype and then move on to wines from other areas that have proven their mettle with the grape: Oregon, cold-climate areas of California, coastal South Africa, the Loire, etc. Along the way we’ll either taste and/or discuss the examples from Alsace, Germany, Champagne, our Midwest and Northeast, northern Italy and others. Come see why Pinot noir is the fastest growing variety on the American market. ---$55.00 per person

2. How to Build a Pape (7/24/2009)
Châteauneuf-du-Pape is one of the most famous wines on the planet. Part of its charm is its history (the real and fake Popes and all that!); but part of it lies in its complexity as well. Under the law it can me made from over a dozen different grape varieties. Each of those in the average “Pape’s” blend brings something, literally, to the table, be it color, acidity, texture, perfume or what have you. We will taste a good Pape to start out with and then taste other southern French wines made mostly or exclusively from Syrah, Mourvèdre, Grenache, Counoise and others to show what each grape adds to the whole. Hammer and nails not needed. ----- $45.00

3. Good Value White Wines (7/28/2009)
Have you had your “sticker-stroke” yet after looking at the prices of white Burgundy and Bordeaux? In this session we’ll deal with the ways to get around paying high prices for decent white wines (including Burgundies and Bordeaux!). And, no, you don’t have to search out obscure wines from Lower Gazonia: we’ll cover the classic zones (and maybe some not so…). But we’ll pick winners wherever they come from. ----- $50.00

4. Sauvignon/Fumé blancs (8/4/2009)
Sauvignon Blancs (aka Fumés Blancs) are the fastest growing white wines on the market. Depending upon where you grow them they can show flavors ranging from the fresh-cut grassy qualities of Loire interpretations to the dry but almost sweet-tastingversions from the New World. We’ll show both archetypes from France (Bordeaux and the Loire) as well as examples from the US, New Zealand, South Africa and other Sauvignon haunts. -----$55.00

5. Straights vs Blends (4/11/2009)
First, let’s be straight about blends. ALL wines are blends of some sort whether it’s vineyards, grapes, years or whatever that are blended. What we will be doing here is looking at pairs of wines one of which will be a pure varietal expression (i.e. made solely from 1 grape variety) while the other will be fashioned from that same variety but blended with the wine from another as well. You may like the “straight” or you might prefer the “blend”. But you will definitely learn why at this seminar. The grapes we will deal with straight are Syrah, Cabernet-Sauvignon, Sangiovese and Chardonnay.-----$45.00

Single session seminars last about 90 minutes. Their
subject nature ranges across the board covering grape varieties,
regions, countries or hemispheres.
Unlike the five-week courses which are aimed at a
given level of knowledge (i.e. Basics, Advanced), these seminars are
open-ended: beginners or the more advanced can get something out of
them (and enjoy the wines!).
Both the instruction and the wines are included in the
fee.
You must be 21 or over to attend.
Refunds (or a transfer to another seminar with
available seating) are granted only if you give Chicago Wine School
notice at least 48 hours prior to the start of the seminar you have
initially reserved.
